These no-bake orange coconut ball cookies with their fruity twist are light and refreshing.
Have you seen the movie Frozen yet? If you haven’t, you should probably go and do that. Like now. It’s okay, I’ll wait….

I watched it for the first time a few weeks ago and I’m completely hooked. The music is beautiful (and so catchy!), the characters are lovable, and the storyline is incredible. I love the focus on the relationship between the two sisters! It is so heartwarming. I’ve been walking around humming, “For The First Time In Forever” all week and quoting Olaf.
These cookies actually remind me of little snowballs, which obviously remind me of Olaf. I should have made a mini coconut ball cookie snowman with a little carrot nose and a sign that said, “I like warm hugs!” But, despite their Winter-y appearance, the orange juice and coconut make these little guys light, citrus-y, and quite Spring-like. They would look just as cute as little bunny tails – perfect for a pre-Easter treat!
They’re extremely easy to throw together. Put some vanilla wafers into a food processor and chop them up.
Try to make sure there aren’t any big cookie chunks left.
Now add the butter, orange juice concentrate, and powdered sugar.
Process away and it’ll nicely mix it all together and form a soft cookie batter. Now it’s time to form the cookie balls. It’s pretty soft batter at this point, so you can always chill it for a few minutes to slightly firm it before scooping it into balls, but I’m always way too impatient to add that step into the process!
Drop tablespoon-sized balls of dough into the coconut and then roll them until they’re completely covered.
Now, just pop them into the refrigerator until they firm up.
That’s all there is to it!
When I make these, I always stick a bag into my freezer. Whenever the mood strikes, I can just grab one out for a sweet treat.Print
Coconut Ball Cookies Recipe
- Yield: 5
- 12 oz box vanilla wafers, crushed
- 1 stick butter or margarine
- 6 oz can orange juice concentrate, thawed
- 1 lb powdered sugar
- 2 cups sweetened coconut flakes
- Mix the wafers, butter, concentrate, and sugar well.
- Form into 1″ balls and roll in coconut.
- Chill in the refrigerator for at least 4 hours.
