My grill spent the last 5 months packed away in the corner of my storage unit. Lonely. Unused. Hidden away behind tubs of Christmas decorations and file cabinets. It was a sad time for the both of us.
But now that it has been uncovered, unpacked, and set up at my new place, I’ve been using it all. the. time. I’m kind of addicted. Pretty much any food that I feel like making, I want to grill it. Meat? Grill it! Veggies? Skewer them, then grill ’em! Fruit? Yup, that too! Pizza? Why not?
And then, one day, inspiration hit. Bacon. Brown sugar. Asparagus. The three of them were meant to be. It might just be the perfect bite-sized side dish.
First, buy a bunch of asparagus, the thicker the better. In this case, a “bunch” meaning an actual rubber banded bunch, not just meaning a lot of asparagus.
Just to clarify.
Though I am a fan of a lot of asparagus.
Trim the ends off of the asparagus, then cut the spears in half.
Then grab some bacon. The maple kind is my favorite. Side note – because of this video of a talking dog, I can never say the phrase “the maple kind” without saying it in a ridiculously silly voice.
Cut the bacon slices into fourths, then lay them out flat and sprinkle each piece with brown sugar.
Then take an asparagus spear and wrap it up in it’s sweet bacon-y blanket, all cozy like.
Repeat that for all of the spears and bacon slices and slide them onto skewers.
I made this recipe twice, once with thicker metal skewers and once with thinner wooden skewers. The thinner skewers work a lot better with these, because the metal ones tended to snap the spears in half when I slid them through.
Then grill ’em! About 6 minutes per side.
The grill gives them that smokey, summer flavor (yes, “summer” is absolutely a flavor).
The bacon gets crispy and the brown sugar adds just the perfect amount of sweetness to balance out the saltiness of the bacon.
They would make perfectly poppable appetizers at a barbecue or we ate them as a side dish to our hamburgers with some Loaded Baked Potato Casserole.
- 1 lb asparagus spears, trimmed
- 1/2 c. brown sugar
- 12 oz package of bacon, each slice cut into 4ths
- Preheat grill to medium high.
- Spread bacon pieces in a single layer on a flat surface and sprinkle brown sugar on each piece.
- Cut each asparagus spear in half.
- Wrap each spear in the sugar-covered bacon and slide onto skewer.
- Cook for 6-8 minutes per side, or until bacon is cooked.
