These quick and easy Cranberry Almond Energy Bites are the perfect sweet and satisfying healthy snack to grab on the go.
I am a snacker.
It seems like no matter how much I eat for breakfast, lunch, or dinner, I always get hungry in between. And sometimes, that’s dangerous, because I’ll eat whatever is around. On good days, that will mean apples, baby carrots, and hummus. On not-so-good days, that means Little Debbie Nutty Bars, Cheetos, and leftover tater tots.
Which is exactly why I try very hard to keep healthy and filling snack choices around all the time. I keep Nature Valley Peanut Butter Dark Chocolate Protein Bars in my purse in case I get hungry when I’m out shopping. I try to always keep apples in my kitchen for mid-afternoon snack attacks.
And I try to keep a batch of Cranberry Almond Energy Bites in my freezer.
Cranberry Almond Energy Bites
Chopping your almonds is about as strenuous as this recipe gets…and believe me, it’s worth it.
So, gather up your ingredients.
Pour your honey and your peanut butter into a microwave-safe bowl.
Nuke it for a few seconds until it melts and you can stir it together in sweet and creamy peanut butter deliciousness.
Pour all of the rest of your ingredients into the bowl…
and stir it up.
Then grab your cookie scoop! You can always just grab about a tablespoon’s worth of dough and roll them up into bites, but my cookie scoop is one of my most commonly used kitchen tools, so if you don’t have one yet, this is a fantastic excuse to get one!
Once they are all scooped, put them into the fridge for awhile to harden.
Then stick them into an airtight container like tupperware or a freezer storage bag. You can keep them in the fridge for about a week, but I prefer to keep them in the freezer since they last longer (about 3 months…but I always go through a batch before then!) and it doesn’t take them more than a few minutes to soften enough so they are easy to eat.
And it never hurts to make a double batch, just in case….

- 1/2 c. peanut butter
- 1/3 c. honey
- 1 c. old fashioned oats
- 1/2 c. ground flaxseed
- 1/2 c. dried cranberries
- 1/3 c. almonds, roughly chopped
- Add peanut butter and honey to a microwave safe bowl and microwave for 20-30 seconds. Stir.
- Add remaining ingredients and mix until combined.
- Using a small cookie scoop, scoop bites onto a silicone baking sheet or parchment paper.
- Refrigerate until firm.
- Store in an airtight container in the refrigerator for up to a week or in the freezer for up to 3 months.
