  1. Heat oil in a small non-stick skillet over medium heat.
  2. Add onions to pan and saute until golden brown.
  3. Turn heat down to medium-low.
  4. Add baby spinach and cook until just wilted.
  5. Beat eggs, salt, and pepper together in a small bowl and pour into pan.
  6. Using a spatula, push the eggs from side to side in the skillet, cooking until the eggs are set.
