  • 2 c. low sodium chicken broth
  • 1 c. uncooked quinoa
  • 1 tsp lime zest
  • 2 Tbs lime juice
  • ½ c. chopped cilantro


  1. In a sauce pan over high heat, bring the chicken broth and quinoa to a boil.
  2. Reduce heat and simmer for about 15 minutes, until quinoa is tender.
  3. Stir the lime zest, lime juice, and cilantro into the quinoa just before serving.
