Every week, I make time to connect with the most important people in my life. I have small group, weekly family dinner, Monday phone dates with my best friend, and Skype dates with my prayer partner.
Which is why I want to have a Friday virtual coffee date with you.
I would absolutely love to meet you in person and hear about the ups and downs and in-betweens of your life, but since that’s difficult to manage, the next best thing would be for you to leave me a comment or shoot me an email. I really do care about what’s going on with you! I have an ongoing list in my prayer journal of blog readers who have reached out to me sharing struggles, successes, and just everyday life stuff and I love all of it!
Here’s what’s been going on in my world.
I Had To Relinquish My Engagement Ring
My engagement ring has been a bit too big since Adam proposed in December, but I’ve been putting off getting it resized because I knew I would have to give it up.
Adam convinced me it was finally time.
It has officially been 5 days since I had to leave my ring with the jeweler and my hand just doesn’t feel right without it anymore.
I’m supposed to get it back today, so here’s hoping!
And The Wedding Date Is…
And since we’re on the topic of the engagement…it’s coming to an end super fast!
I haven’t officially announced our wedding day here yet, but our cake topper arrived in the mail this week and I wanted to share it with you, so here it goes…
I get to marry Adam on June 16, 2018.
50 days and counting!
We found a cute little house on the other side of town (Adam will be moving here from Denver) for our first home and we’re signing our lease on Sunday (yay!).
Mountain Rockhounding With Texans
Adam grew up in Texas and it seems like since we started dating, Texans who live in Colorado just keep coming out of the woodwork.
When Adam sold some of his rocks recently, we connected with a really nice couple who just recently moved out here from Texas.
We really enjoyed them, so we met up with them last weekend to go rockhounding at a place Adam had found outside of Sedalia.
It was the most beautiful day to be outside!
We brought Boots (of course!) and spent the afternoon looking for amazonite and feldspar.
Okay, so that’s a little bit of a fib.
I looked for rocks for awhile, but while the others hunted rocks, I spent most of the afternoon enjoying the river, the mountains, and the quiet.
I just never get tired of the beauty that Colorado has to offer and it’s just hard to beat a warm (but not too warm), sunny day with good people and mountain air.
We ended up grabbing pizza together in Sedalia after our mountain rock escapades.
I have to say, it’s pretty fun to have couple friends.
I mean, Adam and I both have friends who are couples that we knew before we started dating, but this is the first couple we’ve met and built a friendship with as a couple.
I love that and I look forward to many more.
I’ve been running by myself (well, with Boots, but without any other people) for the last couple of weeks because my parents have been out of the country on vacation.
I’ve been listening to audiobooks while I run and I’m kind of loving it! Though I’m super excited to get my running buddy back next week.
I have some exercises and stretches I do on the floor after I run and I think it might be the dogs’ favorite part of the day.
They sit on me, lick me, sniff me, play tug of war over me, roll on top of me…
They’re a very lively and lovable bunch, for sure!
Oh, Colorado Weather
It feels like Colorado weather just plays with us sometimes.
There’s no switching out winter and summer wardrobes yet because one day, it will be snowing and the next it will be sunny and 75 degrees.
Case and point – this week.
It was cold, blustery, and snowy on Saturday.
And on Wednesday, it was beautiful, sunny, and warm.
To celebrate the gorgeous weather, my brother-in-law grilled steaks and asparagus and he made the BEST baked potatoes ever!
I am not a baked potato fan at all. I think they’re so plain and boring, but he learned a new way to cook them and I am officially a baked potato covert.
They were fluffy, flavorful, and the texture was just perfect. As we were eating, I kept trying to brainstorm all of the ways we could start using baked potatoes more.
We will definitely be having a baked potato bar soon!
The Food Bank
Our small group volunteers at the food bank once a month and this was our week.
Our group, along with part of another group, sorted and bagged about 2,400 pounds of onions that night.
The couple that sorts onions together stays together. <3
Also, you’ve gotta love how flattering hair/beard nets are!
I haven’t been eating much fish lately (for no particular reason at all), but the other day, I was really wanting salmon for dinner.
I’m that person that gets a food idea in mind and then searches Yelp for the best restaurants nearby.
We found a restaurant (Etai’s Bakery Cafe) near Adam’s house that just happened to have this salmon bowl on the menu and it definitely hit the spot.
It had jicama (one of my favorite vegetables that for some reason I rarely eat!) and mango pineapple slaw that was incredible with mustard greens over brown rice.
So, so good!
