Every week, I make time to connect with the most important people in my life. I have small group, weekly family dinner, Monday phone dates with my best friend, and Skype dates with my prayer partner.
Which is why I want to have a Friday virtual coffee date with you.
I would absolutely love to meet you in person and hear about the ups and downs and in-betweens of your life, but since that’s difficult to manage, the next best thing would be for you to leave me a comment or shoot me an email. I really do care about what’s going on with you! I have an ongoing list in my prayer journal of blog readers who have reached out to me sharing struggles, successes, and just everyday life stuff and I love all of it!
Here’s what’s been going on in my world.
My Current Favorite Healthy Breakfast
I am a HUGE fan of mango salsa. I think it’s because the sweet of the fruit cools down the spice for me (because I am such a wuss when it comes to spice!)
Two scrambled eggs (with a handful of baby spinach if I have it, but I forgot to grab more at the store) plus a couple of tablespoons of this Freestone Peach & Mango Salsa has been my go-to breakfast this week.
Some mornings I toast half a bagel to go with it, but most days this is plenty.
12 grams of protein (this is what I care about most in my breakfasts) and it’s only 160 calories.
For the record, I only know the calorie count because I plugged it into My Fitness Pal for this post. I just pay attention to whether or not my breakfast keeps me full until lunch!
Spa Treatment From An 8-Year-Old
My niece, Brianna, turned 8 this week!
This girl has a heart of gold. She has a spunky streak (she gets that from me, by the way), but she is constantly coming up with ways to do special things for the people around her.
She loves running to get my water bottle for me because she knows that if it is more than two feet away from me, I’m probably thirsty.
She knows I’m always cold, so every time we sit together to read books or watch TV, she will get a blanket to put over us. And she is always warm, so she’ll sit on my lap and assure me that she’ll warm me up.
The other night at family dinner, she said she had a special treat for me.
She asked me to sit on the swing while she gathered dandelions and feathers, then she proceeded to give me a foot and back rub.
No complaints from this aunt!
She started to give Adam a similar spa treatment (after some swinging time, of course), but I put a wrench in the plans.
When I was pushing Caden on the swing, I stepped on a piece of wood and gave myself the biggest splinter of my life.
I’ll spare you the details, but it was not pretty.
Thankfully, I live with two nurses, so they have a fully stocked medical cabinet and my sister is pretty awesome at splinter removal.
Brianna’s friend birthday party is tonight which will be so fun, but it also happens to be my prayer partner’s birthday today!

Gifts From Colombia
My parents are back from their trip to Colombia and Ecuador and I am thrilled they are home!
We always miss them like crazy when they are gone, but we love hearing about all of their adventures afterward.
This trip, they toured coffee plantations, climbed a monolith, drank all kinds of exotic juices, played the traditional Colombian game of tejo (it involves gun powder and throwing things), and so much more.
And, as always, they brought us back fun souvenirs. The golden berries chocolate bar was incredible! They brought me a little silver cross from a place where they actually taught them how they make filigree jewelry. The hat is SO warm (and I love that it covers my ears!) and the scarf is so soft…and pink, of course! They know me well.
The Health Benefits of Being Outside
You know in Miss Congeniality how the girl answers the question, “Describe your perfect date” with, “That’s a tough one. I’d have to say April 25th, because it’s not too hot, not too cold. All you need is a light jacket.”
This was the perfect date, so we spent the afternoon outside at the park doing our pre-marital counseling homework. It always puts me in such a good mood, and for good reason.

The Wedding Cake Dilemma
I’d planned on getting out wedding cake from a local grocery store. I talked to them months ago and they said to come back closer to the date to order.
When I contacted them this week, they told me they aren’t doing wedding cakes anymore!
Another location in town is, so I talked to them and picked up some samples, but honestly? They were not very pleasant people. They sounded overworked and quite unhappy to be working on our cake, so I started asking around.
Apparently, the daughter of a woman in my small group makes cakes, so she’s going to make it for us (yay!).
Now, we need to decide on flavors. Adam likes the idea of spice cake or cinnamon cake, but I prefer more unique flavors like salted caramel or peaches and cream.
OptUp – A New Healthy Living App
King Soopers (our Kroger store here in Colorado) sent me an email this week announcing a new app they have called OptUp to encourage healthy living.
You just sign in with your King Soopers login info and it pulls up foods you’ve recently bought and it basically rates how healthy they are.
So far, I’m pretty impressed! When you click on the item you bought, they will recommend similar items that have a better healthy rating that you could consider.
They decide their rating from a variety of different factors, so I’m sure it’s not a fool-proof system, but just scrolling through my groceries, I’d say their ratings are pretty close to what I’d rate them myself.

Christian Weight Loss
Sara and I are gearing up for our next 7 Weeks to Christian Weight Loss course and I’m getting so excited!
The course starts June 4th and we’ll be in our new house by then! Adam moves in June 1st and I’ll move in after the wedding.
I set a new fitness goal every time we go through the course and I have some really good ideas about what I’m going to work on this time.
I need to add little bursts of fitness throughout my long workdays of sitting at a desk because so much sitting is really making my lower back sore, even with my morning workouts.
The Joys of Running In The Rain
It was really rainy yesterday morning on our run. My sister said we were crazy for going out in it and suggested we do a yoga DVD inside instead.
Fortunately, my mom is awesome and braved the weather with me.
My feet and head were soaked by the end of the run (I actually ended up using a hair dryer on Boots because he was so wet!), but I’m still so glad we got out and did it!
Sometimes things seem so much worse than they actually are until we just do them.
There’s a song from The Other Sister that kept going through my head the whole time that goes, “I’m gonna love you like nobody loves you, come rain or come shine.”
I am glad that my parents bought me a running rain jacket for Christmas (I use the Brooks LSD Jacket). It was the perfect layer today to keep (most of) me dry.
