Every week, I make time to connect with the most important people in my life. I have small group, weekly family dinner, Monday phone dates with my best friend, and Skype dates with my prayer partner.
Which is why I want to have a Friday virtual coffee date with you.
I would absolutely love to meet you in person and hear about the ups and downs and in-betweens of your life, but since that’s difficult to manage, the next best thing would be for you to leave me a comment or shoot me an email. I really do care about what’s going on with you! I have an ongoing list in my prayer journal of blog readers who have reached out to me sharing struggles, successes, and just everyday life stuff and I love all of it!
Here’s what’s been going on in my world.
Adam and I were invited to a party to watch the opening ceremonies and asked to dress as a country.
We went as Switzerland, which is kind of perfect for us since we are both pretty neutral about everything!
I thought they did a pretty great job with the ceremony. It didn’t wow me quite as much as the Beijing ceremony did, but I really loved a lot of the dancing and special effects they had going on. The people dancing under the animal costumes were awesome!
Have you been watching the Olympics this week? I haven’t seen nearly as much as I wanted to watch, but ice dancing has been my favorite, by far!
We met with our wedding photographer last Sunday and I am so. stinkin’. excited. He is SO talented and I just can’t wait to see the memories he is going to capture! He is going to do an engagement shoot with us next weekend, so that’s pretty darn exciting.
We met him at this really neat little coffee shop in Denver and I asked the barista to make me the most unique, Instagram-worthy drink they had. She made me this matcha latte…I’ve had other matcha things that I really liked, but this one was NOT tasty! It tasted very…grassy. But it was pretty!
We also got our invitations ordered this weekend! We’re definitely not going fancy on anything (neither Adam or I are very fancy people anyway), but we found a cute invitation on Etsy that we both like. Another thing off the list!
Next week, I meet with both the caterer and person about flowers. Things are moving along!
Valentine’s Day & Our First Date Anniversary!
Adam and I’s first date was on Valentine’s Day last year. We met at a coffee shop to do a puzzle. We were having such a good time that we decided to go on a walk around a park nearby. Then we went to dinner and a movie and stayed in his car talking for hours. We call it our “marathon first date” because it was practically 5 dates in one.
And one year took us from first date to fiance!
This year, we met halfway in between his house and mine to have dinner at a Nepalese restaurant. Their sweet potato masala was SO good!
And afterward, we went to a Starbucks to do a puzzle, which has now officially become our annual Valentine’s Day tradition.
It was such a perfect day to reminisce about the past year and talk about all of the exciting things to come (over smoked butterscotch lattes). We both are SO excited for the day when we can live in the same house and get rid of this hour-long drive between us!
Last year, he brought me a salted caramel chocolate bar. This year, he wrote me the sweetest card (that I will keep forever and read over and over and over again) and brought me more chocolate! He knows me well. And he gets bonus points for paying attention when I mentioned that I wanted to try the new Hershey’s Gold bar.
I got bold this week with my Instant Pot and invented my first IP recipe when I couldn’t find quite what I was looking for on Pinterest.
I also made honey lemon baked chicken with roasted asparagus and rice and I forgot to take a picture of my last recipe, but it was probably my favorite of them all – CPK Thai Peanut Chicken Pasta (but I doubled the sauce, used whole wheat pasta, and added way more vegetables).
And I am seriously loving the Instant Pot yogurt I made. I’ve been switching it up every morning and topping it with different things. This one was a drizzle of honey, pumpkin flax granola (from Costco – SO good!), and some blueberries.
I gave up worrying for Lent and it has been AWESOME so far! I start my day off with journaling, thinking about what I may be tempted to worry about that day. I break it up into what I want to ask God for in regards to that worry and then thank Him for something related to it.
I hope I can keep up with this consistently because it has made my days so much more joyful and focused already! It’s amazing how much time and stress I put into worrying, even just about the “small” things.
This is my new favorite picture of Boots. We went on a run last week on a very chilly, foggy morning and this is what he looked like after 2 miles! Frosty the border collie. He is so stinkin’ cute.
I am completely clueless when it comes to fashion. I just don’t have an eye for it! Thankfully, I have friends who do, so I have a fashion team spread out all across the U.S. (well, Washington, Arizona, and Texas, at least). Every time I buy new clothes and am trying to put together new outfits, I text them pictures like the one below to see if my clothes choices or approved or if I should be sent onto an episode of What Not to Wear. I was SUPER proud of myself because everything in this outfit, boots and all, were at least 70% off. That alone is a win in my book!
Adam has a thing for antiques. When we were first dating, I thought he only wanted to check out antique stores for their rocks (he’s a huge rockhound and has a very impressive rock and mineral collection), but it turns out I was really. He genuinely likes antiques. Which is kind of funny because I really don’t like antiques. Unless there is family history or something sentimental attached, I’d rather buy things new. I like browsing antique stores, but I don’t necessarily want any of it in my house! It’ll definitely be interesting to see what our decorating style will be like when we’re married!
