Every week, I make time to connect with the most important people in my life. I have small group, weekly family dinner, Monday phone dates with my best friend, and Skype dates with my prayer partner.

Which is why I want to have a Friday virtual coffee date with you.

I would absolutely love to meet you in person and hear about the ups and downs and in-betweens of your life, but since that’s difficult to manage, the next best thing would be for you to leave me a comment or shoot me an email. I really do care about what’s going on with you! I have an ongoing list in my prayer journal of blog readers who have reached out to me sharing struggles, successes, and just everyday life stuff and I love all of it!

Here’s what’s been going on in my world.

Pre-Marital Counseling

For our pre-marital counseling, we are going through this awesome book with our marriage mentors and the book has an assessment that goes with it. They are very clear that you are supposed to take it separately and not discuss your answers (that was really hard for me!). Then, we met with a pastor who walked us through our results and what they mean.

It was super encouraging for us! The pastor kept emphasizing that “on paper, you two are HIGHLY compatible” and in every section would comment about how it was just amazing that we were always on the same side of the spectrum in various areas.

He also kept chuckling because our results (and just spending 2 seconds talking to us) made it very clear that neither of us like change and neither of us like making decisions.

And it’s so true! We are both major people pleasers who are pretty laid back, go-with-the-flow kind of people, so it’ll be really interesting to see how that plays out in our marriage!

Also, I met with our wedding caterer this week and I cannot wait for our wedding food! My church runs a food truck and they are going to be catering and our menu sounds incredible. Fish tacos, sliders, bacon mac & cheese, and so much more. My mouth waters every time I think about it.

And I met with our flower lady this week and those are good to go, too! They are going to be peach and light pink with lots of baby’s breath (because I just love that stuff) and it sounds like they will be everything we were hoping for (AND they were less than we were predicting – huge win!).

Chinese New Year

Every year that I can remember growing up, we would celebrate Chinese New Year by making homemade egg rolls. Some years, we would invite a bunch of people over and have a huge egg roll making party and some years it was just our family, but it was an annual tradition in our family.

This year, Adam was introduced to the egg roll making and my niece and nephew quickly became pros (after a few slightly misshapen first attempts). We went vegetarian on the filling this year, but most years we’ve added ground meat into the mix.

Also, the Silpat mats made awesome little workstations that were easy to clean up!

The finished product! We also made a teriyaki chicken noodle skillet with broccoli to go with it and my mom made homemade almond cookies for dessert.

Side note, grating large amounts of fresh ginger is a great way to get a mini arm workout in while you’re prepping dinner! (This is the microplane I use.)

Family dinner is one of my favorite parts of the week. Brianna was thrilled that Adam taught her how to play Words With Friends (and she is surprisingly good at it!) and Adam was thrilled to cuddle with the puppy.

And, even though it isn’t technically traditional Chinese (it’s Taiwanese), we added boba tea to the night before our Chinese New Year celebration. We can’t help it. Adam and I go crazy for those drinks.

5-Day Mindful Eating Challenge

I needed to renew my passport this week because I haven’t used it since I went to Germany when I was 15 and I need it for our honeymoon.

My sister saw the old picture and said, “Whoa! A few things have changed since you were 15, huh?”

Yup. Just a few things.

Oy, With the Cold Already!

I have been happily cuddling with all of the dogs this week because it has been SO cold here this week!

We have plenty of ice and snow ’round these parts and I am happily staying inside whenever it’s possible.

I actually ran on the treadmill for the first time in a long time the other day because I just couldn’t get myself to go out when it was 6 degrees. That, and it wasn’t even safe to run because the sidewalks and paths hadn’t been cleared yet.

Boots sulked next to the treadmill the whole time.

I would love if he would run on it (he’s actually the reason I got it), but unfortunately, even with bribes of rotisserie chicken, he’s terrified of it whenever it is turned on.

But, after a missed run and two days of missed walks, I had one super stir-crazy border collie on my hands, so we went out and braved the 12-degree weather and Boots was happy as a clam.
