Red Robin Night, the surprise that made Adam’s day (& then mine!), someone must be spying on us, the ingredient missing from your fajitas, a DIY homemade birthday gift idea, and capturing joy.
Every week, I make time to connect with the most important people in my life. I have small group, weekly family dinner, Monday phone dates with my best friend, and Skype dates with my prayer partner.
Which is why I want to have a Friday virtual coffee date with you.
I would absolutely love to meet you in person and hear about the ups and downs and in-betweens of your life, but since that’s difficult to manage, the next best thing would be for you to leave me a comment or shoot me an email. I really do care about what’s going on with you! I have an ongoing list in my prayer journal of blog readers who have reached out to me sharing struggles, successes, and just everyday life stuff and I love all of it!
Here’s what’s been going on in my world.
Today, I’m writing this to you from a Discount Tire store because I got a screw in my tire this week (side note – I absolutely love Discount Tire & they are fixing my tire and rotating them all for free!).
Red Robin Night
When it comes to family, I just have one of the best ones around and it just so happens that my brother-in-law loves to cook elaborate meals and spoil us all like crazy with them.
A few times a year, he puts on a Red Robin Night, where he has each of us pick a burger off the Red Robin menu, then he recreates it for us at home.
The burgers are HUGE (mine had smoked gouda, bacon, & caramelized onions on it) and he doesn’t stop there.
He also made homemade fried pickles (not pictured because we ate them as our appetizer, homemade (and hand-cut) french fries, and the most decadent little Oreo cheesecake bites ever (fudgy brownie on the bottom, homemade cheesecake in the middle, and brownie on top).
And for the healthier part of the meal, my mom brought this amazing salad with cabbage and mango and red peppers with a light, fruity dressing.
Day at the Rock Show…
Last Saturday, I surprised Adam by taking him to a local gem & mineral show. He’s a rockhound, so he’ll take pretty much any excuse he can get to spend time looking at rocks.
I was pretty giddy about being able to surprise him with something, so of course I had to build it up a bit and make him close his eyes as we were driving up.
The theme of that show was fluorite & fossils and since fluorite is pretty much his favorite mineral, it was one of those things that was just meant to be.
& Random Acts of Kindness
We took our time wandering through the rocks for a few hours, visited the arrowhead exhibit next door, and then wandered through a coin collector show that was also in the building.
That’s where we met Dennis. We chatted with him for awhile about coins and metal detecting and such and somewhere in the conversation, we mentioned we were getting married in June.
He stopped us, rummaged around in his things, and handed us a sixpence from New Zealand.
I had no idea that the phrase, “Something old, something new, something borrowed, something blue…” ended with “and a sixpence for her shoe.”
How have I missed that tradition all these years?!
Anyway, I was just really touched by Dennis’ kindness…so, of course, I asked if I could take his picture with the sixpence, write about him, and share his card.
If you are into coin collecting, Dennis is the guy to get ahold of. He knows his stuff.
Catana Comics – It’s Like They Know Us
I stumbled across Catana Comics the other day and I cannot. stop. reading them.
It’s like they are writing about Adam & I!
I immediately sent him the link to read and he said he was cracking up because they are just so accurate of our relationship.
We are so quirky.
They get us.

Pineapple Sheet Pan Fajitas
Family dinner this week was sheet pan fajitas and, oh-my-goodness, were they delicious!
If you have never added pineapple to your chicken fajitas, you must try it!
My mom roasted the pineapple with the chicken and veggies and it added the best flavor!
I’d give you a recipe, but nobody in my family really follows them, so it wouldn’t do much to help you recreate this meal.
But trust me on the pineapple thing!
Just another family dinner moment to remember.
Later this week, I asked Caden who ended up winning their game and his response was, “Well, we didn’t finish our game, but Adam was playing very well.”
I love being related to this adorable 5-year-old!
Earlier this week, we had the most beautiful Spring day, so I took a work break, leashed up the dog, and went for a rare mid-day run.
I guess I’ve become one of those crazy people who enjoys that. (Believe me, it’s still weird to me, too.)
The quiet neighborhood, the sunshine, and the endorphins put me in the best mood and I was just so thankful.
Creative DIY Birthday Gift Idea
For my brother-in-law’s birthday last April, I gave him a Cookie of the Month, meaning I would make him a batch of whatever kind of cookie he desired every month for a year (this month he chose white chocolate raspberry).
Stephen really (really) loves cookies, so he’s been loving the year-long gift, but you could do so many similar things that aren’t just desserts.
- get them a unique, new food every month (something uncommon like kiwiberries from Sprouts!)
- make them a healthy dinner once a month
- make them something homemade that fits the season – yogurt, applesauce, peach butter, zucchini bread, pumpkin muffins, etc.
- the possibilities are endless!
But it’s a pretty awesome way to come up with a practical gift idea for that person who is hard to buy for in your life.
Everybody loves delicious homemade food!
A Question for Your Quiet Times
I used to end almost all of my quiet times with this question, but somehow I got out of the habit so this week I brought it back.
After I journal, pray, read Scripture and/or my devotional, when I’m just wrapping up my quiet time, I ask,
God, is there anything You want to speak to me today?
And then (and this part is the key), I stop and listen.
Sometimes a Bible verse, a phrase, or a word comes to mind. Sometimes a person or even just a feeling. Sometimes it’s just quiet.
But taking that time to stop and wait for His response is so important in my relationship with him
