Crockpot Tex-Mex Chicken Lettuce Wraps from Eat Live Run – I added black beans and corn and it tasted fantastic!  For some reason, it was very juicy/drippy, so it was a very messy lettuce wrap, but, boy, was it delicious!

This week, even though I’m not a big oatmeal person, I decided to try overnight Refrigerator Oatmeal from The Yummy Life.  It combines rolled oats, milk, Greek yogurt, honey, chia seeds, and flavorings that you stick in a mason jar, shake/stir up, then let sit overnight.  It’s definitely not my favorite morning food (partially because I don’t love oatmeal and partially because I prefer warm breakfasts), but it was good, healthy, and filled me up!
