I am all too familiar with rushed mornings.

What can I say?

That snooze button is just oh-so-tempting. That leaves me running around the house in a hurry, trying to get everything ready as fast as possible and just hoping I’m not forgetting something important like putting on deodorant (er…not that I’ve done that).

Breakfast usually doesn’t make the priority list until my stomach starts growling as I’m practically running out the door.

Because I know how eating a healthy breakfast can transform my entire day (it’s a huge reason I’ve been able to lose 100 pounds and keep it off), I plan ahead so I don’t have to think in the morning!

These are a few of my go-to breakfasts on busy mornings:

Smoothie Freezer Kits

Basic Green Smoothie Recipe: 1 chopped green apple with spinach leaves inside a sealed plastic container and 1 cup of measured almond milk.

This Basic Green Smoothie recipe is my favorite to use, but you could use the same idea with any smoothie recipe.

I don’t usually have the time or brain power to gather and chop ingredients in the morning, so I make freezer kits ahead of time. I gather and prep all of the ingredients I need except for the liquid and stick them in a freezer bag.

That means in the morning, the only thing I have to do is grab the bag from the freezer, pour it into the blender with the liquid, and mix it up!

Overnight Oats

I love overnight oats, especially in the winter time!

You can eat them hot or cold, but I prefer them to warm them up on chilly mornings. I usually throw together 4 or 5 mason jars of overnight oats on Sunday afternoon and in just a few minutes, I have breakfast ready for the entire week.

Breakfast Burritos

This is another one of my winter favorites! It’s protein-packed and easy to throw vegetables into breakfast burritos (spinach, bell peppers, onions, etc). As a bonus, a warm burrito makes a great hand warmer on the drive to work! Use the ingredients you and your family love – use a whole wheat tortilla and turkey sausage to make it a little healthier or add bacon and green chiles…whatever you like!

Make as many of these ahead of time as have freezer space for, but I usually try to keep about a dozen or two ready to grab. You can wrap them in a paper towel and microwave them frozen, but I like to thaw them in the refrigerator first. I think it tastes better!

Mini Quiches

Roasting the vegetables makes that much more delicious (and healthier, of course!). It makes for a wonderfully hearty breakfast to grab on the go.

Sweet Potato Breakfast Skillet

This Sweet Potato Breakfast Skillet is a one-pot meal that I love using as part of my breakfast meal prep. I love this as-is, but my husband prefers his eggs scrambled if they are going to be reheated, so I just cook his separately instead of breaking the eggs on top.

On Sundays, I make a batch, dole them out into individual meal prep containers and then on weekday mornings, we simply reheat them.

Apple Cinnamon Breakfast Quinoa Bites

I love making a double or triple batch of these Apple Cinnamon Breakfast Quinoa Bites at one time to freeze. On the morning I need them, I take out however many I want, stick them in the microwave, and breakfast is done.

I love dipping them in Greek yogurt for a healthy breakfast treat.
