Mini Meatloaves Recipe

I have a million and one things to post about, but haven’t actually had time to sit down and type it all up yet!  For not having anything planned for the weekend, I sure was busy!  Good busy.  Exciting busy.  🙂

In the mean time…

I’m trying to organize a recipe binder to help myself get a little more organized and have been trying to get our favorite recipes typed up.  Mommy’s Kitchen had posted a recipe for Honey Barbecue Meatloaf (which I also need to try soon!) and it reminded me that I hadn’t printed my Mini Meatloaves recipe yet. And then I found that somehow this recipe had gotten lost in the archives and I hadn’t even posted it here yet!  Crazy!

This is one of my favorite weeknight recipes.  There aren’t very many recipes that make my regular meal rotations, but this is definitely one that does!  It is so easy to throw together!  The stuffing mix adds a bunch of spices and flavors and I really love the texture of the stuffing cubes (definitely my preference over bread or cracker crumbs).

Sometimes I sub out the honey barbecue sauce for steak sauce.  Sometimes I just increase the water a bit and don’t include any sauce at all.  It just depends on what we have on hand at the time!

I love these with steamed vegetables and Cheesy Hashbrown Potatoes.  Such an easy way to make comfort food!

Mini Meatloaves Recipe : So Very Blessed
Mini Meatloaves

Mini Meatloaves

Yield: 12

Ingredients

  • 1 lb ground beef
  • 1 box stuffing mix
  • 3/4 cup water
  • 1 Tbs Worcestershire
  • 1 egg
  • 1/4 cup honey barbecue sauce

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together in a large bowl.
  3. Fill each cup of a greased muffin tin with the meat mixture, pressing gently to condense.
  4. Bake for 30 minutes.
