I am trying really hard to pay attention to ingredients these days.

Honestly, there are foods that I absolutely love (here’s lookin’ at you, Little Debbie Nutty Bars!) and I don’t even want to know what they pack in there.

BUT, for the most part, I really try hard to make things from scratch, avoid super processed stuff, eat whole foods, and eat real foods.

When the ingredients you are used to using aren’t the cleanest, that is a serious challenge!

Cut the Cool Whip

Growing up, foods like Cool Whip and Ramen noodles were staples. They were even considered healthy!

Cool Whip was the lighter and better-for-you-than-whipped-cream option and Ramen noodles were used in things like Chinese Chicken Salad. I still love Ramen noodles, but I have been experimenting with different crunchy options.

Unfortunately, neither of those foods is healthy (yes, that even includes the “light” Cool Whip). Cool Whip has hydrogenated oils, high fructose corn syrup, polysorbate 60, and more.

Recently, I was in charge of making dessert for our weekly Sunday night family dinner. I knew I wanted it to be light and fresh and summery, but every single idea I had that fit the bill also included Cool Whip.

So, I went back to the drawing board to try to come up with a viable substitute.

I am not anti-homemade whipped cream as a sometimes food, but my nephew has some food sensitivities, so that wouldn’t work for him.

So, I set my sights on Greek yogurt.

And, oh, it worked like a charm!

I had my doubts. I didn’t want to feel like I was eating a breakfast parfait for dessert, but it wasn’t even close!

It was a light and extremely delicious treat that certainly didn’t taste “healthy” to any of us (and that includes a 3 and 6-year old!).

This summer berry trifle is the perfect dessert to bring to a summer barbecue or potluck. It is super easy to throw together. On top of that, it doesn’t use many ingredients, the bright summer berries make it a beautiful dish, and the best bonus of all – it’s good for you!

Prep Time: 20 minutes
Total Time: 20 minutes

A healthy AND delicious summer dessert, perfect for a barbecue or potluck with light angel food cake, protein-packed Greek yogurt, and beautiful summer berries.

Ingredients

  • 2 pounds strawberries, hulled and quartered
  • 2 Tbs honey
  • 11oz loaf angel food cake, sliced into bite-sized cubes
  • 3 c. honey vanilla Greek yogurt
  • 1 pint blueberries

Instructions

  1. Mix together the honey and strawberries and let sit for about 20 minutes.
  2. In a glass bowl or trifle dish, sprinkle 1/3 of the angel food cake cubes, spread 1 cup of the yogurt on them, top with 1/3 of the strawberries, then sprinkle with 1/3 of the blueberries.
  3. Continue layering cake, yogurt, and berries until all ingredients are used.
  4. Serve immediately
