Twice Baked Potato Bites Recipe
Appetizers | Blog Posts | Recipes | Sides
I love potatoes. In a big way. Especially fried…or covered in cheese.
But since I’ve been trying to lose weight, I’ve been trying really, really hard to stay away from fried things…and excessive amounts of cheese.
These are delicious and they totally satisfy my potato craving! Â I can eat 4 bites for 120 calories, which means I can either eat even more of them or have plenty of calories left to come up with something else fun to eat with these. Â I am so in love with these little guys that fill me up and make me feel like I’m eating more than I actually am.
I liked them plenty plain or topped with a little sour cream. Either way, they were the perfect comfort food for Sunday dinner!

Thanks for this recipe! These are almost like potato pancakes in a muffin tin. Delicious, and hubby likes the use of green onions. I might replace the flour with matzo meal but otherwise I would not change a thing.
Has anyone tried freezing it? Does it hold up well when reheated? Thanks
These looks very taste.
These look fabulous, will try them tonight. They look easy & would be handy to have in the freezer 🙂 thanks
hard to judge size of potatoes, would you say about two cups?
These look so yummy and easy!
Melissa, I kept the peel on the potatoes! I just mashed it up with the rest of the stuff! 🙂
These look so unique! I love twice baked potatoes but they’re so much work. They looks like they’re much easier and very yummy too. Have you ever tried keeping the peeling on for extra healthy bites?
These look so good! Perfect for game days!

So glad I found you, can’t wait to make these, love it! Pinned!
