See, my brother-in-law is a nurse and his schedule is pretty crazy. He switches between working nights and days, so it’s hard to find a reasonable amount of time when he’s home and awake. But he also really enjoys making the most of his time off.

Sometimes he works on projects, but most of the time, he likes to plan to make a special meal for us. On this particular day, he offered to help me make this grilled vegetable medley and he was also going to make salmon burgers with a teriyaki glaze in Healthier Hamburger Buns.

We had checked the weather and carefully planned around his work days…but we live in Colorado. And Colorado weather changes in the blink of an eye. So…he ended up grilling in a snowstorm!

It was pretty hilarious because it hadn’t been snowing a bit until he went out to turn the grill on.

Then the flakes just kept bigger and bigger and the snow piled higher and higher…until he was done grilling. Then it stopped pretty quickly!

This recipe is super easy to throw together. The most difficult part is just chopping all of your veggies, so if

But there’s just something about buying them whole and chopping them myself (or watching my brother-in-law chop them, anyway) that feels fresher and more natural.

Once the chopping is over, just toss them in a bowl with the oil, salt, and pepper and put them into the grill basket.

We use our grill basket SO often during grilling season! It makes it so easy to grill small pieces of things (like these vegetables) that might otherwise fall through the grates.

Then it’s just waiting and stirring and waiting and stirring.

And, in our case on this particular day, running inside to warm up, kicking the snow off our shoes, and running back outside.

They were the perfect accompaniment to our salmon burgers that day, but we’ve also had them with steaks, hamburgers, hotdogs, grilled pizza, and so many other things.

You really can’t go wrong! Oh, and depending on the size of your grill basket, you may want to make them in two batches. Sometimes they don’t cook as evenly when the basket is completely full.

Grilled Vegetable Medley Recipe

This Grilled Vegetable Medley, full of carrots, broccoli, and cauliflower, is the perfect healthy side dish for summer meals. 

Ingredients

  • 1 head cauliflower, chopped into florets
  • 1 crown broccoli, chopped into florets
  • 1 lb baby carrots
  • 2 Tbs avocado oil or extra virgin olive oil
  • salt & pepper, to taste

Instructions

  1. Preheat grill to medium.
  2. Toss all vegetables together into a bowl with oil, salt, and pepper.
  3. Pour vegetables into grill basket and cook for 20-30 minutes, stirring occasionally, until vegetables are crisp-tender.

Notes

Depending on the size of your grill basket, you may want to cook them in two batches for even cooking.
