I don’t garden. In fact, I have proven my black thumb many with many (many) dead basil plants.
Basil is supposed to be the easiest thing ever to grow, so I’m pretty sure I’m sunk for any future gardening dreams. In all honesty, I don’t really have much interest in gardening anyway.
My interest just lies in the fresh food that comes from the garden. Luckily, I have people in my life who are very gifted gardeners that I get to mooch off of.
My brother-in-law recently found these purple green beans that apparently turn green as you cook them. He planted a bunch of them the other day and I cannot wait to try those babies out!
My extremely picky nephew won’t eat most foods, but he will happily pick and eat fresh green beans from the garden.
I’ll eat them fresh, but, as is the case with most vegetables, I prefer to eat them roasted.
How to Make Roasted Green Beans
Wash your fresh green beans and trim the ends. Then spread them out on a baking sheet.
Drizzle them with oil, sprinkle them with your spices, and stir it all up to make sure all of the beans are coated.
Then stick them in the oven to bake. It should take around 20 minutes at 425 degrees.
You can brown them as much or as little as you’d like for your tastes.
Roasting Frozen Green Beans
I try to meal plan carefully and use fresh produce when I can, but there are some meals that are just last minute.
I keep my freezer full of frozen vegetables for that very reason.
And, as a bonus, they are already trimmed for you!
You can follow the exact same directions as above, but bake them for 30 minutes at 425 degrees (about 10 minutes longer than fresh).

- ½ tsp salt
- ½ tsp garlic powder
- ¼ tsp freshly ground pepper
Instructions
- Preheat oven to 425 degrees.
- Spread onto a baking sheet in a single layer.
- Drizzle with olive oil and sprinkle with salt, garlic powder, and pepper.
- Stir to combine.
- Bake for about 20 minutes, until green beans are starting to brown.
