You can use a regular blender or a food processor as well, but the immersion blender is definitely the easiest choice (it’s SO easy to clean compared to a blender or food processor!).

Ingredients

  • 6 eggs
  • ½  c. 1% cottage cheese
  • ½ c. plain, non-fat Greek yogurt
  • ¼ tsp salt
  • 1/8 tsp pepper
  • 6oz turkey sausage links, cooked and chopped
  • ¼ c. roasted red peppers, chopped
  • 4 oz Monterey jack cheese, shredded
  • 2 c. baby spinach, chopped

Instructions

  1. Blend together eggs, cottage cheese, Greek yogurt, salt, and pepper.
  2. In silicone egg bite molds, layer sausage, cheese, red peppers, and baby spinach into the molds.
  3. Pour egg mixture in, filling each cup about ¾ full.
  4. Cover the pan with foil.
  5. Add 1 cup of water to your Instant Pot. Put the silicone mold onto the trivet and lower into the pot.
  6. If you are cooking two pans at once, twist the upper pan slightly so that the cups are not directly on top of each other.
  7. Close the lid, make sure the valve is set to “Sealing,” and press the “Steam” button. Set the time for 7 minutes.
  8. When the cooking cycle is complete, allow the pressure to naturally release, which should take 10-15 minutes.
  9. Remove the molds from the pot and allow them to cool slightly for a few minutes before gently removing the bites from the molds.

Notes

* You can refrigerate or freeze these if you make them ahead of time. Microwave for 30-45 seconds to re-warm from the fridge. Microwave 60-90 seconds to re-warm from the freezer (both heating times vary depending on your microwave)
