Yup. You read that right.
I love her idea of adding surprise ingredients inside of a brownie, so I made mine mini (because I adore mini food) and replaced the Oreos with Nutter Butter Bites and the peanut butter with Nutella.
Because I can.
This recipe is insanely easy, but also slightly time consuming. It wouldn’t take as long if I had just made 24 normal sized “cakes,” but bites are so much more fun to me.
So, make some brownie batter! You can use any kind you’d like. I used Pillsbury’s Family Size Chocolate Fudge mix. Delicious.
And gather your Nutter Butter Bites (I used about 3 of those Grab & Go containers, because I couldn’t find a bigger bag), Nutella, and a knife.
Take a Nutter Butter Bite. Admire its beauty. Ooo ahh.
Now slather some Nutella on that baby. I know the recipe says “1/2 cup Nutella,” but don’t measure. There’s no use in dirtying a measuring cup when you can stick your knife right into the jar and slap it right on the cookie.
Get another Nutter Butter Bite and stick it right on top.
Two cookies call for two layers of Nutella. Just sayin’. So, get some more on there.
Now place it into your mini muffin pan. Next time I’m going to spray the liners with cooking spray before I start. Some of them didn’t stick at all, but other brownies were stuck to that paper like glue. I gave some to a teacher I work with and she worked for about 5 minutes to get it unstuck.
Someone else just ate the paper.
Get all of your Nutter Butters covered in Nutella and in the tin.
This is my favorite part. The part where you get a spoonful of rich, chocolatey batter and it slowly drips over the Nutter Butters. You haven’t lived until you’ve seen brownie batter spread…or something like that.
Try to get the brownie batter to slide down all sides of the cookies.
Until they’re chocolate-covered perfection.
Bake them and eat at least one (or 5) while they’re still warm – so gooey and delightful!
The Nutella isn’t the strongest taste here, but it adds a wonderful depth to the peanut buttery flavor that the Nutter Butters bring and the fudgey chocolate from the brownies.
I love that you can see all of the layers when you cut bite them open. Amazing.
I took these to share with my coworkers, because I sure didn’t need to devour all 48 of them! Baked goods make life easier.
- 1 package brownie mix (plus necessary ingredients to prepare batter)
- 96 Nutter Butters Bites
- 1/2 cup Nutella
- Prepare brownie batter, according to directions on the box.
- Preheat oven to 350 degrees.
- Line mini muffin tins with mini cupcake liners.
- Spread Nutella on two Nutter Butters. Stack one on top of the other and place in mini muffin tin. Repeat until all 96 cookies have been used.
- Carefully spoon brownie batter over the cookies, spreading the batter down each side of the cookie. Fill cup about 2/3 full. Repeat with all remaining cups.
- Bake for 10-12 minutes.
