I’m always late to jump on the fun fad bandwagon because I’m always worried I’ll be the one that gets duped into trying something ridiculous that turns out…well, horribly.
But this particular fad is adorable and seemed pretty fool-proof.
So, instead of carving pumpkins to get that Fall feeling today, I carved bell peppers.
It’s super easy! Cut off the top, pull it out, cut off the “innards,” then just scrape out the few membranes and seeds that are left inside. Then use a sharp knife and let your creativity go to work!
Make your jack-o-lantern pepper cute, spooky, silly, or abstract…whatever floats your boat!
My creativity was broken that night, so I went with the traditional jack-o-lantern look, which I always find an adorable classic. Triangle eyes, a jagged little jack-o-lantern toothed smile, and crispy deliciousness.
I used my favorite Quinoa Stuffed Peppers recipe to stuff him. If you haven’t tried that recipe yet, do it now! It’s healthier than rice and has an extra boost of protein to keep you full longer. But, most importantly, it’s delicious and really easy to make.
Just as a side note, I’m not a fan of the really soft cooked texture of bell peppers in traditional stuffed pepper recipes, so I always bake them for less than the recommended time on stuffed pepper recipes so the texture is still a bit crunchy. I also don’t love green peppers, so I always use yellow, orange, or red, even when it isn’t Halloween! They are sweeter and I love them!
