This Cilantro Lime Quinoa is a healthy, light, and fresh side dish full of protein, perfect for burrito bowls, taco salads, fajitas, and burritos.
“Fresh” is my absolute favorite word this time of year (most of the year it’s “spatula”…what can I say? It’s a funny word!).
But during the summer, the word “fresh” always precedes something delicious.
Fresh summer berries.
In other words, “fresh” all things amazing.
So, when I’m looking for summer recipe ideas for lunches and dinners, you better believe I’m looking for dishes that taste crisp, cool, and delicious!
This Cilantro Lime Quinoa fits the bill because of all of that fresh (there’s that word again!) cilantro and freshly squeezed lime juice.
Cilantro Lime Quinoa
Just cook up a pot of quinoa and start adding in the good stuff. This recipe takes it up a notch by adding in lime zest along with the juice, boosting the flavor that much more.
Stir in the cilantro and that’s all there is to it!
You can use this for a burrito bowl (which I did – recipe coming soon!), a burrito filling, or as a side for all of your favorite Mexican dishes (think fajitas or enchiladas).
It’s a great dish for potlucks, family gatherings, and summer barbecues.
Add black beans, grilled chicken, guacamole – whatever else you like! It’s sure to be a crowd-pleaser.
- 2 c. low sodium chicken broth
- 1 c. uncooked quinoa
- 1 tsp lime zest
- 2 Tbs lime juice
- ½ c. chopped cilantro
