“Fresh” is my absolute favorite word this time of year (most of the year it’s “spatula”…what can I say? It’s a funny word!).
But during the summer, the word “fresh” always precedes something delicious.
Fresh corn.
Fresh produce.
Fresh peaches.
Fresh summer berries.
In other words, “fresh” all things amazing.

This Cilantro Lime Quinoa fits the bill because of all of that fresh (there’s that word again!) cilantro and freshly squeezed lime juice.
How To Make Cilantro Lime Quinoa
Just cook up a pot of quinoa and start adding in the good stuff. This recipe takes it up a notch by adding in lime zest along with the juice, boosting the flavor that much more.

Stir in the cilantro and that’s all there is to it!

You can use this for a burrito bowl, a burrito filling, or as a side for all of your favorite Mexican dishes (think fajitas or enchiladas).

It’s a great dish for potlucks, family gatherings, and summer barbecues.

Add black beans, grilled chicken, guacamole – whatever else you like! It’s sure to be a crowd-pleaser.

Cilantro Lime Quinoa Recipe
This Cilantro Lime Quinoa is a healthy, light, and fresh side dish full of protein, perfect for burrito bowls, taco salads, fajitas, and burritos.
Ingredients
- 2 c. low sodium chicken broth
- 1 c. uncooked quinoa
- 1 tsp lime zest
- 2 Tbs lime juice
- ½ c. chopped cilantro
Instructions
- In a sauce pan over high heat, bring the chicken broth and quinoa to a boil.
- Reduce heat and simmer for about 15 minutes, until quinoa is tender.
- Stir the lime zest, lime juice, and cilantro into the quinoa just before serving.
