Every week, I make time to connect with the most important people in my life. I have small group, weekly family dinner, Monday phone dates with my best friend, and Skype dates with my prayer partner.
Which is why I want to have a Friday virtual coffee date with you.
I would absolutely love to meet you in person and hear about the ups and downs and in-betweens of your life, but since that’s difficult to manage, the next best thing would be for you to leave me a comment or shoot me an email. I really do care about what’s going on with you! I have an ongoing list in my prayer journal of blog readers who have reached out to me sharing struggles, successes, and just everyday life stuff and I love all of it!
Here’s what’s been going on in my world.
Adam and I have been spending almost all of our time wedding planning for the past month or so, so we decided to take this weekend off and just do fun stuff!
We went out to lunch on Saturday to this place called The Waffle Lab. Oh my gracious, it was the best waffle I’ve ever had! We decided to split one savory and one sweet waffle. The savory one was topped with cream cheese, honey smoked salmon, capers, and fresh dill and I think I would want that waffle to be part of my last meal. It was SO good!
They make “liege” waffles, which uses a yeast dough instead of a typical batter and they also have these sugar crystals mixed in, so you get just a hint of sweetness in certain bites.
Afterward, we went to a wine and painting studio (but we didn’t have wine because we got preoccupied with painting and forgot to order it). I always forget that Adam has an art degree (he’s a graphic designer).
All afternoon, he was pulling out all of these genius artist moves, talking about color wheels and blending and brush strokes and such.I am so impressed with all of the details he added to his trees. When we move into our place after we get married, I’m just going to have him paint all of our artwork.
The Super Bowl
Most of my family has been hit by a nasty bug, so family dinner was canceled this weekend. We went to church, had our first pre-marital counseling session, then met with some friends to watch the game. Well…”watch” the game in my case.
Honestly? I’m into the Super Bowl for the food and the commercials.
Even more honestly? I cared way more about the new This Is Us episode afterward (so many tears!).
But the food was awesome (my friend Liz made this homemade chili that was SO good) and the people were hilarious and we had a fantastic time.
Boots did too, but he napped for most of the game (he’s wearing a ThunderShirt to help with his stress of car rides).
We ended the night with Farkle Party and Adam and I came in second place, so that was kind of a big deal.
Instant Pot Meal Prep
Can I just say how much I have been LOVING my Instant Pot?
I have been housesitting for the past month and I have been using it to prep a week’s worth of lunches and dinners for both Adam and I to eat during the week. I’ve been spending about half of my Fridays cooking, then I pack his food up into individual containers in a cooler and send them home with him at the end of the weekend.
Last week, I made Instant Pot shredded barbecue pork (with shredded zucchini added, because I can’t NOT add vegetables to things!) to serve over baked sweet potatoes and topped with avocado, Instant Pot white chicken chili, and Instant Pot spinach mac & cheese with turkey Li’l Smokies.
I also made yogurt for the first time ever. It was SO good! I eat individual containers of Chobani all. the. time. I still think Chobani is one of the best yogurt choices out there, but the homemade stuff is cheaper and it tastes all kinds of amazing.
How’s The Weather?
Here in Northern Colorado, it is cold and snowy. Freshly fallen snow is absolutely beautiful and sparkly and it turns the world into this winter wonderland, BUT…
It’s so cold! And when it’s cold, I like staying inside in front of the fire (which I have been doing a whole lot of). BUT I have a stir-crazy border collie who needs to get out, so we have still been going on our tri-weekly morning runs, even with the added obstacles of snow, ice, and COLD.
