My mom did 99.9% of the cooking in our house as I was growing up, but there are three things my dad is the master of in the kitchen – frying the corn tortillas for our family’s traditional stacked enchiladas, melting cheese on Saltines in the toaster oven, and making Green Chile Casserole.
This is one of my favorite comfort foods. It is creamy, cheesy, and flavorful without being spicy. I don’t do spicy.
Start by browning ground beef and onions together, drain it, then mix in the corn, green chiles, cream of chicken soup, and milk and just cook it all until it’s heated through. No bubbles required.
Next, grab a 2 quart casserole dish, grease it, and spoon a bit of the meat mixture into the bottom of the pan.
Lay a tortilla on top.
Spoon a little more sauce on there…
and sprinkle some cheddar cheese over the layer.
Continue layering the tortilla, sauce, and cheese until you get to the top of the pan.
My mom has a casserole dish that is perfectly shaped for this casserole, but my dish was a bit wider and more shallow, so I tore up the extra tortillas and sprinkled them in the extra space.
Then pour on all of the extra sauce on top of the casserole.
Sprinkle cheese across the top…
cover the dish, and bake.
The casserole comes out perfectly melty and the corn tortillas around the outside add just a bit of crunch.
It’s pretty much perfection.
You could top it with Cholula or salsa for a little more kick, but I’m a Green Chile Casserole purist. It is perfectly delicious on its own.
Green Chile Casserole
Ingredients
- 1 lb. ground beef
- 1 onion, chopped
- 1 can corn or 1 1/2 - 2 cups frozen corn kernels
- 1 (4 oz) can diced green chiles
- 1 can cream of chicken soup
- 1 (5 oz) can evaporated milk
- 1 dozen corn tortillas
- 2-3 cups shredded cheddar cheese
- salt and pepper, to taste
Instructions
- Preheat oven to 350 degrees.
- Brown ground beef and onion and drain.
- Mix ground beef and onion with corn, chiles, soup, & milk. Sprinkle with salt and pepper. Heat well but do not boil.
- Spoon a bit of the mixture into a greased 2 qt casserole dish. Place a corn tortilla on top on that. Add more sauce, then sprinkle with cheese. Repeat layering corn tortilla, meat sauce, and cheese until all tortillas have been used.
- Sprinkle remaining cheese on top of casserole.
- Cover the dish and bake for 45 minutes.
Notes
To reduce calories, only sprinkle cheese on top of the casserole.
