I am all about home cooked dinners (obviously! I have a food blog with gobs of recipes!), but sometimes life gets in the way and you just can’t make them happen. Your schedule gets a little too crazy, someone ends up in the hospital, or you just simply don’t have the time or the energy. It happens to everybody from time to time.
A few months ago, when I moved out of my house in Tucson, I had packed up all of my pots and pans and pantry items and there was just no way to cook in my kitchen for those last few days before I left. Sure, I could have gone out to eat for every meal, but that gets expensive and calorie-heavy fast. I guess I could have lived off of cereal and apples, but that’s not exactly the well-rounded meals I was used to eating, and I really like some variety to my meals.
Instead, I headed to the freezer aisle at Walmart!
If you haven’t tried them yet, you absolutely need to look for these LEAN CUISINE® MARKETPLACE meals. They are nutritious (a must for me), super flavorful (not at all like those gluey mashed potatoes I used to get in frozen dinners), and the best part of all is that they are ready in just a few minutes. Lean Cuisine does all the work for me so that all I have to do is open the box and put it in the microwave.
I am that person who is always on the lookout for trendy foods. I almost never order the same thing twice and my tastes change with my moods, so I absolutely love that Lean Cuisine is now offering these limited time varieties to keep up with my ever-changing taste buds for what’s trendy & delicious, and still manage to keep it all healthy. They are even available in protein-packed and gluten-free options with organic ingredient options, and there are no GMOs.
Their current varieties are: LEAN CUISINE® MARKETPLACE Cheese & Fire-Roasted Chile Tamale, LEAN CUISINE® MARKETPLACE Chicken Tikka Masala and LEAN CUISINE® MARKETPLACE Southwest – Style Potato Bake.
Because I can never get enough vegetables, I decided to throw together a quick Mexican Vegetable Skillet to eat alongside of my Lean Cuisine Marketplace Cheese & Fire-Roasted Chile Tamale.
This is a super easy recipe. Chop your veggies, saute them for a few minutes, and you’re done!
This healthy vegetable side dish that is the perfect addition to add flair to any Mexican meal!
