I am all about home cooked dinners (obviously! I have a food blog with gobs of recipes!), but sometimes life gets in the way and you just can’t make them happen. Your schedule gets a little too crazy, someone ends up in the hospital, or you just simply don’t have the time or the energy. It happens to everybody from time to time.
A few months ago, when I moved out of my house in Tucson, I had packed up all of my pots and pans and pantry items and there was just no way to cook in my kitchen for those last few days before I left. Sure, I could have gone out to eat for every meal, but that gets expensive and calorie-heavy fast. I guess I could have lived off of cereal and apples, but that’s not exactly the well-rounded meals I was used to eating, and I really like some variety to my meals.
Instead, I headed to the freezer aisle at Walmart!

Because I can never get enough vegetables, I decided to throw together a quick Mexican Vegetable Skillet to eat alongside of my Lean Cuisine Marketplace Cheese & Fire-Roasted Chile Tamale.
This is a super easy recipe. Chop your veggies, saute them for a few minutes, and you’re done!
This healthy vegetable side dish that is the perfect addition to add flair to any Mexican meal!
Mexican Vegetable Skillet
- 1 Tbs vegetable or avocado oil
- 1 yellow onion, cut into 2″ cubes
- 1 medium zucchini, sliced into half coins
- 1 medium summer squash, sliced into half coins
- 1 red bell pepper, cut into 1″ pieces
- 1 orange bell pepper, cut into 1″ pieces
- 2 tsp minced garlic
- 1 1/2 tsp chili powder
- 1 tsp cumin
- salt & pepper, to taste
- Heat oil in a large skillet over medium-high heat.
- Add onion and cook for 2-3 minutes.
- Add remaining ingredients.
- Cook, stirring frequently, for 6-8 minutes, or until crisp tender
- Serving Size: 6-8
