Candlelight dinner on the beach, snorkeling in the Dominican Republic, swimming with dolphins, trampoline beach aerobics, my favorite foods of the week, marriage lessons learned already, and this week’s healthy meal plan.
Every week, I make time to connect with the most important people in my life. I have small group, weekly family dinner, Monday phone dates with my best friend, and Skype dates with my prayer partner.
Which is why I want to have a Friday virtual coffee date with you.
I would absolutely love to meet you in person and hear about the ups and downs and in-betweens of your life, but since that’s difficult to manage, the next best thing would be for you to leave me a comment or shoot me an email. I really do care about what’s going on with you! I have an ongoing list in my prayer journal of blog readers who have reached out to me sharing struggles, successes, and just everyday life stuff and I love all of it!
Here’s what’s been going on in my world.
Wedding Pictures to Come
Long time no see! I can’t wait to tell you all about the wedding, but I want to share the pictures when I do so I’m going to wait another week or so until we get them back from the photographer.
Things didn’t go as we had originally planned that day, but it was so much fun and we walked away married – yay!
Until I get the official pictures, here’s one my new-in-law took that day to give you a sneak peak.
The day after the wedding, we flew to the Dominican Republic to stay at an all-inclusive resort for the week.
Candlelight Dinner On The Beach
The first night we were there, we had a candlelight dinner on the beach that both of us thought was one of our favorite parts of the trip.
They had drawn a huge heart on the beach and another one around just our table.
They brought us delicious appetizers, 3 main courses (lobster, shrimp risotto, and steak), a chocolate mousse…and then all of a sudden they came out dancing and singing with instruments and a flaming chocolate mousse cake for us!
The plate said “hoonymoon” (misspellings of English words were pretty common there), but we were still blown away by the special treat.
And, of course, we wished each other a “Happy Hoonymoon” all week long!
Our server also brought us Mamajuana that night (on top of the champagne they had already given us for the special occasion), which is a traditional Dominican drink made from rum, red wine, honey, tree bark, and herbs. They have a special way to toast and drink it, which was super fun.
And that was only the first night of the trip!
They pampered us so well all week!
Because we were considered VIPs, we had a private beach to use that was really quiet and relaxing. The naps I had on those cabanas were some of the best naps of my life!
Our housekeeper, Juanita, made up our bed in a different design everyday, always with fresh flowers and flower petals.
The frozen drinks were all kinds of amazing. The pina colada was my favorite, but the red berry daquiri came in a close second.
Snorkeling in the Dominican Republic
We mostly stuck around the resort, but we spent one morning off on excursions away from the hotel.
The snorkeling was so much fun! The water was a little bit murky and they didn’t let us swim very far away from the boat, but we still saw some incredible fish!
And I really appreciated that they got close, but never touched me.
And the snorkeling itself was only part of the excursion. After we were all out of the water, the crew on the boat handed out snacks, cranked up the music, and got people dancing.
We did dance a lot that week, but we were pretty tired by that point, so we just enjoyed sunning on the boat.
Swimming With Dolphins
This is something I’ve wanted to do since I was a little kid, so I’m so glad we were able to include it in our honeymoon!
We were in a pool with a small group of other people, a dolphin (ours was named Monet), and a trainer for an hour or so. We got to swim with him, kiss him, pet him, see him flip, and he even pushed us through the water by our feet while we hung onto a boogie board.
Such a fun experience!
Trampoline Beach Aerobics
But, like I said, we spent most of our time at the resort. The whole week was just a different pace of living. We napped. We ate. We lounged.
But the resort also had all kinds of fun activities that we joined. My favorite was the trampoline aerobics class, but I also really enjoyed their Zumba and dance lessons.
There was a small crew of people that made up the entertainment team and they were the nicest people and made things so much more fun.
Adam played a lot of beach volleyball during the day, but he didn’t appreciate the aerobics as much as I did.
In the evenings, they always had some kind of show going on. They had a karaoke night once, but the rest of the evenings were basically different dancing shows. We loved them for the first night or two and then our interest kind of fizzled out until they brought out fire dancers on the last night! That was really cool.
My Favorite Foods Of The Week
This was an all-inclusive resort, so there was a LOT of eating going on. And, well, it’s me, so obviously I took pictures of pretty much every meal.
The first few days, we mostly ate at the on-site restaurants that were reservation only. The tempura shrimp sushi rolls, steak, and grilled vegetables were amazing!
The rest of the time, we enjoyed their buffet that always had different kinds of food for us to try – grouper, ribs, beet risotto, ravioli, and all kinds of other foods.
There was a dessert bar and a bread and pastry bar laid out for every lunch and dinner and they were amazing! The coconut cake was incredible, they made these chocolate cake ball truffles that were so decadent, and I was shocked at how good their breads were.
Every morning I had a Nutella croissant for breakfast and every day they were available, I had one of their braided breads (and sometimes I would put one into Adam’s pocket to snack on later at the beach).
We ate a lot this week, but I’m still not afraid to gain the weight back. I did gain a few pounds while we were away, but I’ve lost almost all of it already just getting back into my normal eating and running routine. I’m living proof that you can enjoy splurges and treats and still maintain a (mostly) healthy lifestyle!
Marriage Lessons Learned Already
Marriage is pretty amazing so far. I love being Adam’s wife and he is making a spectacular husband.
Here’s what we’ve learned in our first two weeks of being husband & wife:
- I never have to touch another spider, which makes me incredibly happy. Adam makes a great exterminator.
- I need more sleep than Adam does. Poor guy learned that quickly after trying to keep me up too late some nights. There’s a reason I protect my bedtime so fiercely.
- Adam wraps covered containers in plastic wrap. This cracks me up. It’s entirely unnecessary, but completely adorable.
- I am the light-switcher-off-er in our relationship.
- Adam is a master of the grill and he willingly grills every time I ask. This is amazing.
- We like very different sleep environments. I like to be wrapped tightly in a blanket with no noise, no light, and no air movement. He needs a fan for the white noise and air movement and only wants to be under a sheet because he gets too hot easily. I see many compromises in our future.
- I had no idea Adam was such a handyman. He has already fixed outlets, headlights, and all kinds of other little things around the house.
- I liked dating him. I loved being engaged to him. I am over-the-moon thrilled about being married to him and it just keeps getting better every single day.
Healthy Meal Plan
I know that many of you come to my website for healthy living advice, so I am going to try to start sharing my weekly meal plans so that you can see how I eat to maintain my 100-pound weight loss.
This week’s meal plan is only a partial week since we didn’t get home from our honeymoon until later Monday evening.
- Taco salad – chopped romaine & mixed greens, cucumbers, tomatoes, avocado, taco meat (lean ground beef), a little shredded cheese, a few crushed tortilla chips, and Catalina dressing.
- Healthier Instant Pot Cheesy Chicken Broccoli Rice – I was playing around with this recipe to make it healthier and I think we have a winner! Watch for the recipe on the blog soon! Side note – I love my Instant Pot for not heating up my kitchen in the summer.
- Grilled turkey sausage, zucchini, and garlic & herb potatoes (I use red onions, avocado oil, onions, and McCormick’s Grill Mates Roasted Garlic & Herb Seasoning)
