Rice Krispy Sushi Recipe

When Marcia and I told Stephen that we were making this, he grimaced.  We decided to prove him wrong and because we’re awesome, we succeeded.  Our awesome-ness must have overflowed into our sweet snacks, because they were…well….awesome.  🙂

First, we melted half a stick of butter, because really…what would Rice Krispy treats be without butter?  Then, throw in 4 cups of mini marshmallows and melt them over low heat.  I’ve burned many a marshmallow by trying to expedite the process and turn up the heat.

When we were growing up, people used to call my sister Marcia-mallow.  Wait, that may have been me.  Maybe I should bring that nickname back.

When your butter and marshmallows are all gooey and lovely, take the pan off the heat and add 6 cups of Rice Krispies and stir it all up.  Butter the spatula, unless you want a goopy, gloppy, sticky mess.  You could butter your hands, but the mixture was hot and we like our hands un-scalded.  Now, spread it evenly into a cookie sheet.

We decided to go with the more traditional (well, as traditional as you get with fake sushi) sushi filling and bought Swedish Fish.  They were a little too big and there weren’t enough of them, so I sliced them in half.  I know, I know…such a violent, barbaric thing to do, but believe me. It was better this way.

Lay the fish halves across a section of your Rice Krispy Treats, like so.

Then roll the edge over and cut the roll off.  Squish it together a little bit with your hands to try to get it to look like an actual roll.  Have fun with it.  Squishing can be very relaxing.  Keep going until you use up all of your Rice Krispy Treats.

Now, wrap Fruit Roll-Ups around your rolls.  If it’s a warm summer day, beware!  Those babies are hard to get off of their wrappers when they’re melty!  We ruined a couple of sheets and may or may not have had to dispose of the evidence before Stephen saw them.

We thought the green would make the sushi look more authentic, but if you look carefully, you’ll see that they have Shrek’s face printed all over them.  You can still see them, even if you wrap them Shrek-side-in.

So, we decided to go crazy and use the tie dye Roll-Ups, too.  We live on the wild side.

Now, start slicing!  That actually turned out to be the easy part, though they got slightly misshapen.

Keep going…and going…and going…until you’re done with all of your rolls.

Arrange them on a tray for picture-taking purposes…

Then take the tray into the living room and devour them.  We ate about half the plate in 5 minutes.  They’re really good and even Stephen, our naysayer, loved them!

But, as cute as they are, they were very time consuming (mostly because of those darn melty Roll-Ups!)…and we preferred eating the Fruit Roll-Ups separately from the Rice Krispy Treats, which kind of defeated the purpose of wrapping it all together.

Still…it’s cute food!  How could I resist?
